Chocolate coconut cookies

Ingredients for 1 servings:

  • 200 g flour
  • 50 g cocoa powder
  • ½ tsp baking powder
  • 100 g sugar, brown
  • 1 packet of vanilla sugar
  • 3 tbsp desiccated coconut
  • 150 g butter, cold
  • 1 egg(s)
  • some rum
  • 50 g almonds or hazelnuts, chopped

Instructions

Working time approx. 35 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 30 minutes

Chocolate cookies with a Caribbean touch

Mix the flour with the cocoa powder and baking powder. Dice the cold butter and mix with the sugar, vanilla sugar, egg, rum flavoring, and desiccated coconut. Sift in the flour and cocoa mixture and quickly knead everything into a dough, first with a mixer and then quickly by hand. Roll the dough into a log about 5 cm in diameter, wrap it in foil, and let it rest in the refrigerator for about 40 minutes. In the meantime, preheat the oven to 200°C. Cut the log into 1 cm wide slices, slightly reshape them, press one side into the chopped nuts, and bake on a baking sheet lined with baking paper for 15 minutes (nut-side up). Then let it cool on a wire rack. Note: This batch makes about 30 highly addictive cookies.
