Ingredients for 4 servings:
- 800 g beef fillet(s), from the middle
- 3 tbsp mustard, medium hot
- 200 g bacon or bacon slices
- 300 ml whipped cream
- 200g Gorgonzola
- salt and pepper

You can serve it with spaetzle and leaf salads
Season the fillet with salt and pepper and spread with mustard. Heat the oil in a heavy pan (preferably an iron pan) and sear the fillet on all sides. Cover the fillet with bacon and cook in a preheated oven at 200°C for about 30 minutes. Remove the fillet from the pan at the end of the cooking time and remove the bacon. Wrap the fillet in aluminum foil and let it rest for about 5-10 minutes before slicing. Return the pan with the bacon to the stove and sear the bacon until crispy, then remove. Deglaze the pan with cream, bring to a boil, and gradually stir in the Gorgonzola (amount to taste). Then reduce the sauce and season with pepper. Cut the fillet into slices and serve on plates with the sauce and bacon. Serve with spaetzle and leaf salad.
