Baked pancakes filled with broccoli and ham

Ingredients for 2 servings:

  • 5 pancakes
  • 250 g Black Forest ham
  • 250 g crème fraîche with herbs
  • 50 ml milk or cream
  • 300 g broccoli, frozen or fresh
  • Cheese (Emmental), grated
  • 1 small onion(s)
  • Salt
  • pepper
  • oil
  • Butter, for the mold

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Clean the broccoli, divide it into florets, and cook in vegetable stock for at least 5 minutes. In the meantime, peel the onion and dice the ham. Heat the oil in a pan, first gently sauté the onion, then add the ham and fry everything until lightly browned. Make a cream from crème fraîche and milk or cream, add the ham, and season with salt and pepper. Drain the broccoli and halve the florets. Grease a baking dish, top each pancake with a little cream and then some broccoli, carefully roll them up, and place them in the dish. Reserve a little of the cream to coat the pancakes. Finally, sprinkle with grated cheese and bake in a preheated oven at 180°C for 20 minutes.
