Tomato chili chicken with honey

Ingredients for 4 servings:

  • 500 g chicken breast
  • 3 tomatoes, fresh
  • 1 can of tomatoes, preferably chunky
  • 1 clove(s) garlic
  • 1 bunch of spring onions
  • n. B. Honey
  • 1 red chili pepper(s)
  • Soy sauce
  • 2 tbsp vegetable oil
  • salt and pepper
  • basil
  • oregano
  • herbs of your choice
  • e.g. mozzarella
  • e.g. chili powder or
  • Sambal Oelek or similar

super tasty, light main course

First, trim the meat and finely chop the tomatoes, spring onions, and garlic. Heat the pan and add two tablespoons of vegetable oil. Season the meat with salt and pepper and fry in one piece. Once it has turned a light brown color on both sides, remove it from the pan and add a little more oil to the pan. Now add the spring onions and garlic to the pan, followed after about 4 minutes by the fresh tomatoes. Season with salt, pepper, a small squeeze of lemon juice, and a pinch of sugar. After about 5 minutes, add the canned tomatoes and let the whole thing simmer for a while. Next, add the honey (about 1-2 tablespoons or more, depending on your taste) and the chili pepper, which you previously chopped into small pieces. Season with soy sauce and, if desired, add chili powder, sambal oelek, etc. Basil, oregano, or other herbs also go well with this dish. Return the chicken to the pan and cover with the tomato-chili sauce. Place in the oven at approximately 160°C and bake. If you like, you can also scatter some thin slices of mozzarella over the mixture. Remove from the oven after 10-15 minutes. Serve with rice or various types of potatoes, or any kind of vegetables.
