Ingredients for 1 servings:

  • 70 g cherry(s) (topping cherries)
  • 100 g whipped cream
  • 50 g honey
  • 2 tbsp sugar
  • 2 tbsp flour
  • 200 g almonds, sliced
  • 200 g dark chocolate coating

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

makes about 40 Florentines

Slice the cherries. Bring the cream to a boil with honey, sugar, and flour, stirring continuously. Remove the pan from the heat and stir in the cherries and almonds. Line a baking sheet with parchment paper. Place about 40 small almond clusters on the tray using a tablespoon. Bake in a preheated oven (175°C/150°C fan oven) for about 20 minutes until golden brown. Melt the chocolate coating, brush the bottom of the almond clusters with it, and let it dry.
