Heartbeat noodles in tuna and herb sauce

Ingredients for 2 servings:

  • 1 onion(s)
  • 1 garlic clove(s)
  • 1 tsp olive oil
  • 1 can of pizza tomatoes
  • 1 small jar of tomato peppers, cut into pieces
  • ½ lemon(s), juice
  • 2 tbsp tomato paste
  • 1 can of tuna in oil (140 g drained weight), alternatively in its own juice
  • salt and pepper
  • ½ bunch parsley, freshly chopped
  • ½ bunch basil, freshly chopped
  • 250 g whole wheat pasta

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

First, make the tuna and herb sauce. Peel the onion and garlic clove, finely dice them, and fry them in 1 teaspoon of olive oil in a high-fat pan. Reduce the heat slightly and add the pizza tomatoes. Next, add the tomato peppers and lemon juice to the pan. The sauce may still seem very runny, but that’s okay. Gradually stir in the tomato paste and the sauce will thicken. Add the tuna to the sauce, finely shred it with a fork, and mix in. Season with salt and pepper and garnish with basil and parsley. Turn off the heat the sauce is on, but leave the pan on the heat. Cook the pasta according to the package instructions. Then simply transfer to deep bowls and spoon the sauce over the pasta. Serve with freshly grated Parmesan cheese. With 2 tablespoons of Parmesan cheese, the dish will cost 6 points per person. A great, light meal that everyone loves. Even my boyfriend, an absolute fish hater, likes this dish.
