Ingredients for 1 servings:

  • 255 g flour, sifted
  • ½ tsp, sautéed cardamom, ground
  • 1 ½ tsp, leveled baking powder
  • 1 pinch of salt
  • 4 lemons, untreated
  • ½ pack of powdered sugar
  • 115 g butter, room temperature
  • 220 g sugar
  • 2 eggs
  • 3 drops of vanilla flavor
  • 6 drops flavoring (lemon)
  • 100 g chocolate, white
  • 100 g nuts of your choice, roasted in a pan

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 2 minutes

In a bowl, combine the flour, cardamom, baking powder, salt, and lemon zest and set aside. Cream the butter until light and fluffy, then gradually add the sugar and continue stirring. Then add the eggs and the vanilla and lemon flavorings and continue stirring until well blended and creamy. Now add the dry mixture to the wet butter, sugar, and egg mixture and mix thoroughly with a spatula. Roughly chop the white chocolate and nuts with a knife and fold into the batter. Chill in the refrigerator for 30 minutes to make the dough easier to work with. Preheat the oven to 175°C (top and bottom heat). Sprinkle the icing sugar onto a plate. After 30 minutes, remove the dough from the refrigerator and, using a teaspoon, form balls of the dough into the icing sugar dish, about 20g per ball or 1 heaped teaspoon. Roll the dough balls well in the icing sugar. When forming the dough balls, the dough will feel light and slightly sticky. Place the finished dough balls on a baking sheet lined with baking paper. Always leave a gap of about 5 cm between the next ball, as they will spread slightly during baking. Bake in the oven on the middle rack for 10-12 minutes, until the cookies turn golden yellow. Remove the baking sheet and let the cookies cool on the sheet for 2 minutes, then place them on a wire rack to cool. The cookies should still have a slightly soft center after cooling. Tip: If you don’t like cardamom, you can leave it out or replace it with more vanilla flavor. The amount and type of nuts and chocolate can be varied according to your taste, but you can also leave out both.
