Ingredients for 1 servings:

  • 250 g butter
  • 375 g flour
  • 125 g sugar
  • 1 egg(s)
  • ¼ pack of baking powder
  • 200 g ground almonds
  • 1 pinch of salt
  • some sugar, for rolling

Instructions

Working time approx. 35 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 35 minutes

Shortcrust pastry cookies with almonds

Mix the flour with the ground almonds and baking powder. In another bowl, combine the sugar, a pinch of salt, the egg and the diced butter. Stir in the flour and almond mixture and knead into a smooth dough. Roll out the dough into 4 rolls, each about 3-4 cm wide. Brush the rolls with water and roll in sugar, ensuring the entire outside is covered. Cover the rolls and chill for 7-8 hours (or overnight). Preheat the oven to 170°C (top and bottom heat). Cut the rolls into slices about 0.5 cm wide. Place the slices on a baking sheet lined with baking paper and bake for about 15-25 minutes (depending on thickness).
