Peanut sauce with rice and vegetables

Ingredients for 3 servings:

  • 450 g peanut butter
  • 2 tomatoes
  • 3 mushrooms
  • 2 small onions or 1 large onion
  • 300 ml coconut milk
  • 1 bell pepper
  • 100 g cream
  • 1 half lemon(s)
  • 50 ml milk
  • 300 g rice

First, dice half of the onions and sauté them in a pan. At the same time, add the rice. Cut the tomatoes into small pieces and puree them together with the peanut butter, cream, coconut milk, and the juice of half a lemon. Now fry the remaining onions, the sliced ​​mushrooms, and the bell peppers at a moderate heat. Once the onions are well sautéed in the pan, add a little milk, and 1-2 minutes later, add the pureed sauce to the onions. Stir well and bring everything to a boil. Optionally, season the sauce with turmeric and curry powder. The rice and stir-fried vegetables should now be ready, so everything can be served with a generous drizzle of sauce. Of course, you can vary the vegetables according to your taste.
