Fried mackerel with cream and white wine sauce

Ingredients for 4 servings:

  • 4 mackerel(s), ready to cook, 200 g each
  • 1 medium-sized lemon(s), juice
  • salt and pepper
  • 6 tbsp oil
  • 1 large onion(s), white
  • 50 g butter
  • 100 ml whipped cream
  • 100 ml dry white wine
  • ½ tsp peppercorns, crushed

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Rinse the mackerel, pat dry, and lightly score the skin. Season the fish with lemon juice and season with salt and pepper. Fry the mackerel on both sides in hot oil for about 5 minutes until crispy. Then remove and keep warm. Drain the oil. Peel the onion and dice or wedge it, if desired. Heat the butter and sauté the onions. Deglaze with white wine and cream, reduce, and season again with salt and pepper. Serve with the sauce.
