Salmon fillet in coconut milk

Ingredients for 4 servings:

  • 4 salmon fillets
  • 2 cans of coconut milk
  • 1 jar bamboo shoot(s), sliced
  • 1 bag of soy sprouts
  • 4 tsp curry paste or hot paprika paste
  • 1 cup rice (small cup)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Salt the salmon fillets and fry them. Set aside for now. Sauté the bamboo shoots and soybean sprouts. Add the coconut milk, curry or paprika paste (or both), and rice. Simmer until the rice is tender. Add the salmon fillets and serve hot. Variation: Omit the rice and serve separately, but boil more of it. You can also serve mie noodles instead of rice.
