Triple Chocolate Cookies

Ingredients for 1 servings:

  • 90 g butter
  • 300 g dark chocolate
  • 2 eggs
  • 1 tbsp instant coffee powder
  • 140 g sugar
  • 90 g flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 1 tsp vanilla salt
  • 100 g milk chocolate
  • 200 g chocolate, white

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Cut the white and milk chocolate into small pieces and set aside. Melt the dark chocolate and butter in a small saucepan and let cool. Whisk the eggs and instant coffee until the coffee is well dissolved. Then add the sugar and stir until dissolved. Then stir in the chocolate-butter mixture. Mix the flour, baking powder, salt, and vanilla in a small bowl. Add to the coffee-chocolate mixture and mix until a smooth dough forms. Finally, stir in the chocolate chips. Cover and let the dough rest for about 1 hour. Preheat the oven to 160°C (fan-assisted). Using two teaspoons or a small ice cream scoop, place portions of dough onto a baking sheet lined with parchment paper. Bake the cookies for 15-17 minutes. They are done when the surface has a slight shine.
