Orange cookies, not only popular at Christmas – a year-round recipe

Cream the butter or margarine with the sugar and vanilla sugar until light and fluffy. Gradually add 6 eggs and beat for a little longer. The mixture should be nice and creamy. Mix the flour with the orange zest and add in portions, stirring in. There is no baking powder in the batter! Line a baking tray with baking paper. This recipe is ideal for a convection oven, so 2 or 3 trays can be baked at the same time. Using a piping bag, pipe the batter in strips or dots about 4-5 cm long onto the tray(s). Caution: Leave space, as the cookies will spread in the oven! Bake for 10-15 minutes at 170°C (top/bottom heat, convection: 150°C). If not using convection, place the tray in the middle of the oven. After baking, transfer to a wire rack while still hot. If you like, you can glaze the cookies. They also taste delicious without icing. For the glaze, combine the powdered sugar and orange juice. Add the juice a tablespoon at a time until you reach the desired consistency. We prefer a thinner glaze, so I always use a little more orange juice. Spread the glaze over the hot cookies and let it dry. Store in cookie tins or plastic containers.
