Little Red Riding Hood Cake

Ingredients for 1 servings:

  • 70 g margarine (e.g. Sanella)
  • 100 g sugar
  • 2 eggs
  • 140 g flour
  • 1 tsp baking powder
  • Fat for the mold
  • 2 tbsp Nutella
  • 1 jar sour cherries
  • 500 g quark
  • 100 g sugar
  • 2 packets of vanilla sugar
  • 4 packs of cream stiffener
  • 500 ml cream
  • 1 pack of cake glaze, red
  • e.g. cherry juice

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 20 minutes

Make a batter from margarine, sugar, eggs, flour, and baking powder. Halve the batter and place the first half in a greased springform pan. Mix the second half of the batter with Nutella and pour it onto the light-colored batter in the springform pan. Drain the sour cherries well, reserving the juice. Place the cherries on top of the batter. Bake the cake for about 45 minutes in a preheated oven at 150°C (top/bottom heat). Remove the cake from the oven, let it cool, and place it on a cake plate (one that fits in the refrigerator). Place either a cake ring (if you have one) or the edge of the springform pan around the cake. Mix together the quark, sugar, and vanilla sugar. Whip the cream with the cream stiffener and then fold it into the quark mixture. Pour this glaze onto the cake. Make a glaze from the reserved cherry juice (do not add any more sugar!) according to the package instructions and spread it over the cream. Now place in the refrigerator for about 1 hour and then serve.
