Zucchini cream soup

Ingredients for 3 servings:

  • 1 large zucchini
  • 1 m.-sized onion(s)
  • 1 clove(s) garlic
  • some ham or bacon, in cubes
  • 500 ml broth
  • salt and pepper
  • ½ cup cream
  • nutmeg

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Halve the zucchini, hollow out the insides, and cut into thin slices. Dice the onion and fry with the ham cubes in a little oil. Slice the garlic and fry briefly. Deglaze with 250 ml of stock. Add the zucchini slices and cook for about 10-15 minutes. Then puree everything, adding more water if the soup is too thick. Add 1/2 cup cream (or milk or condensed milk). Season the soup with stock, salt, pepper, and a pinch of nutmeg. Tip: For a more attractive appearance, you can add fine zucchini strips or diced ham, perhaps some finely chopped parsley or chives. Also suitable for larger quantities.
