Cheese soup with spinach à la Gabi

Ingredients for 4 servings:

  • 20 g butter
  • 1 tbsp flour
  • 500 ml water
  • 4 packs of processed cheese (Emmental processed cheese), 62.5 g wedges
  • 1 package of spinach, frozen, 300 g
  • Salt
  • garlic powder
  • Sugar
  • Nutmeg, grated
  • Paprika powder, sweet

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Melt the butter, add the flour, let it foam, and then pour in the hot water. Cut the cheese into chunks and melt it in the liquid. Thaw the spinach in the soup and bring to a boil. Season the soup with salt, garlic powder, sugar, and nutmeg. Ladle into soup bowls and serve sprinkled with paprika.
