Ingredients for 1 servings:
- 50 g dark chocolate
- 100 g hazelnuts or almonds
- 1 lemon(s) – zest, grated
- 250 g flour
- ½ tsp baking powder (cream of tartar)
- 100 g sugar
- 1 packet of vanilla sugar
- Salt
- 1 egg(s)
- 4 tbsp whipped cream
- 150 g butter
- Cake icing, chocolate
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Grate the chocolate. Grate the hazelnuts or almonds, finely chop them, or chop them in a food processor. In a bowl, combine the lemon zest, chocolate, nuts, flour, baking powder, vanilla sugar, and salt and mix everything together. Add the egg and cream. Place the butter in pieces on top of the dough mixture. Knead everything into a smooth dough. Shape the dough into 3 to 4 cm thick logs, cover, and refrigerate for half an hour. Set the oven to 200°C (180°C fan/gas mark 3-4). Line a baking sheet with baking paper. Cut 6 to 8 mm thick slices from the logs. Place these on the baking sheet, 1 cm apart, and lightly flatten with the tines of a fork. Bake the cookies on the middle rack for 10 to 15 minutes, remove from the oven, and let cool slightly on the baking sheet. Melt the glaze in a hot water bath and partially dip the cookies. Allow to cool and dry on parchment paper or a wire rack.
