Ingredients for 1 servings:

  • 1 ½ kg pineapple (flesh)
  • 500 g gelling sugar, 3:1
  • 225 ml coconut milk
  • 125 ml white rum
  • 1 sachet/s citric acid, 5g

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely dice the pineapple and combine it with the remaining ingredients in a saucepan. Bring to a boil over high heat, stirring constantly, and cook for at least 3 minutes. Pour into jars while still hot. You can also puree the mixture before filling. Makes 5 jars of 450 ml each.
