Strawberry-ginger jam

Ingredients for 4 servings:

  • 900 g strawberries
  • 40 g ginger root
  • 20 g lemon balm leaves
  • 20 g mint leaves
  • 500 g gelling sugar 2:1
  • 2 lemons, juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 34 minutes

Finely chop the cleaned strawberries in a blender or food processor. Peel the ginger and finely grate it. Finely chop the lemon balm and mint leaves. Combine all ingredients in a saucepan with the preserving sugar and lemon juice and boil gently for 4 minutes. Pour the jam into jars while still hot and seal immediately. If you don’t have lemon balm or mint, the jam tastes delicious without them.
