Ingredients for 1 servings:

  • 150 g peanuts, roasted salted
  • 225 g flour
  • 150 g butter, soft
  • 75 g peanut butter, chunky or creamy
  • 75 g sugar
  • 4 packets of vanilla sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 15 minutes

Line baking sheets with parchment paper. Finely chop the salted peanuts in a food processor and mix with the flour. Beat the butter, peanut butter, and sugar (the vanilla sugar is only for decoration after baking!) until very creamy and fluffy. Add the flour/nut mixture all at once and mix everything into a soft dough. Leave to rest in the bowl in the refrigerator for about 30 minutes. Preheat oven (top/bottom heat) to 175°C (150°C fan-assisted). Shape the dough into approximately 2 cm balls, place them on the baking sheet, leaving some space between them, and bake for about 25-30 minutes until light golden. Once slightly cooled, carefully roll them in the vanilla sugar and leave to cool completely on a wire rack.
