Ingredients for 1 servings:

  • 75 g butter, soft (or margarine)
  • 75 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 1 pinch of salt
  • 125 g flour
  • 1 tsp baking powder, if desired
  • 1 tbsp milk

Preheat oven to 200 degrees Celsius. Cream together the butter, sugar, and vanilla sugar until creamy, then gradually add the eggs. Add salt, flour, and baking powder and mix everything into a smooth batter. Add milk, if desired, to make the batter more pliable. Grease a fruit cake tin and line it with breadcrumbs. Pour in the batter and bake at 175–200 degrees Celsius for about 25 minutes, until golden brown. Turn the tin out immediately after baking. (Cover the tin with a damp cloth to loosen the crust if necessary.) Top the completely cooled base with your choice of fruit. Brush the fruit with glaze and decorate with small dots of whipped cream, if desired.
