Sponge cake base

Ingredients for 1 servings:

  • 75 g flour
  • 75 g sugar
  • 3 eggs
  • 1 pinch of baking powder

Fruit base, super easy and super quick

Grease a cake tin and line the round, middle section with baking paper. If you’re using a Tupperware silicone tray, you don’t need to. Separate the eggs and beat the egg whites until stiff peaks form. Then add the flour, sugar, baking powder, and egg yolks to the same bowl and immediately mix everything together carefully on the lowest setting. Pour the mixture into the prepared cake tin and bake in a preheated oven at 180°C for about 15 minutes. Remove the base from the oven and immediately, using a wooden skewer, carefully loosen the edge. Turn the base out and immediately peel off the baking paper. Allow to cool. The base must not be allowed to cool in the tin, otherwise it will crack and you won’t be able to remove it in one piece. Top with fruit as desired, then cover with glaze and enjoy with a cup of coffee.
