Ingredients for 1 servings:
- 3 eggs
- 100 g sugar
- 3 tbsp water
- 100 g flour
- 1 tsp baking powder

Whisk the eggs and sugar until the mixture has doubled in size (if you haven’t heard of it, it really does increase the longer you stir). Add the remaining ingredients, mix well, and pour into a 26cm springform pan. Bake at 200°C for about 15-20 minutes. Don’t forget to do the toothpick test! Once the base has cooled, top with assorted fruit as desired.
