Ingredients for 1 servings:
- 1 cup milk
- ½ cup water
- ¼ cup butter
- 2 cup(s) plain wheat flour, 405
- 1 ½ cup(s) flour, approx.
- 1 sachet of dry yeast
- ½ tsp sugar
- ½ tsp salt
- 1 egg(s)
- Flour , for the work surface
Instructions
Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 2 minutes
for 12 – 16 soft rolls
In a small saucepan, combine milk, water, and butter and heat to approximately 50°C. In a large bowl, combine 2 cups of flour with the sugar, salt, and dry yeast, and slowly stir in the warm liquid. Then beat in the egg and mix well again. Add the remaining flour, half a cup at a time, and knead. When the dough has a reasonable consistency, knead thoroughly on a lightly floured, smooth surface (this takes me about 6-10 minutes). Then divide the dough into about 12 equal-sized pieces (16 works for hot dogs), roll them into the desired shape (small patties for burgers, small, oblong sausages for hot dogs), and place them on a greased baking sheet or parchment paper. Cover and let rest for about 30 minutes. Bake at preheated 200°C (top/bottom heat) (180°C fan-assisted) for about 10-12 minutes, or until golden brown. Tip: Mix egg white with a little water and brush the rolls with it before putting them in the oven. This will give them a really nice, shiny roll.
