Ingredients for 1 servings:

  • 250 g wheat flour, 550
  • 500 g wheat flour, 405
  • 2 tsp salt
  • ½ cube of yeast or 2 1/2 tsp dry yeast
  • ½ tbsp baking malt
  • 25 g butter, soft
  • 200 ml milk and
  • 200 ml water, mixed
  • 1 cup of milk with some sugar or
  • 1 egg yolk, mixed with 2 tbsp milk

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Rolls

Knead all ingredients into a soft yeast dough. Let rest for 30 minutes, fold, let rest for 30 minutes, fold, let rest for 30 minutes. Divide the dough into approximately 14 portions and shape them into balls. Press firmly into the center with a dough hook. Let rise for another 30 minutes. Then brush with milk and a little sugar or diluted egg yolk. Bake for 20 to 25 minutes in an oven preheated to 200°C. Alternatively, bake for the first 5 minutes at 250°C and then finish baking at 180°C.
