Mediterranean pasta with chili and garlic

Ingredients for 4 servings:

  • 500 g spaghetti or penne
  • olive oil
  • 3 garlic cloves
  • 1 handful of basil, picked leaves
  • 1 tsp, leveled sambal oelek
  • 2 dashes lime juice or lemon juice
  • 1 ball of mozzarella
  • 1 handful of cocktail tomatoes, halved
  • 1 handful of pine nuts, toasted in a pan

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta al dente as usual. Dice the mozzarella, set aside the halved tomatoes and toasted pine nuts. Heat plenty of oil in a pan. Finely slice the garlic and add it to the oil along with the sambal oelek. Deglaze with the lime juice. Place the pasta in a large salad bowl and add the tomatoes and mozzarella. Then pour the oil mixture over the salad and sprinkle with the pine nuts and basil leaves. Toss lightly and serve with a glass of red wine. No additional seasoning is necessary, just be careful with the sambal oelek! This recipe is incredibly quick and a hit at any party.
