Ingredients for 1 servings:

  • 250 g butter
  • 250 g sugar
  • 2 eggs
  • ½ lemon(s), juice and grated peel
  • 500 g flour
  • 1 egg yolk, for brushing

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Cookie cutters from a batter

Cream the butter until light and fluffy, then alternately beat in the sugar and eggs. Add the lemon juice and zest and mix with the flour to form a smooth dough. Let the dough rest in the fridge for about 1 hour. Then roll out the dough on a floured surface to a thickness of 1/2 cm. Cut out any shapes you like, brush with egg yolk, and bake at 180°C until golden brown. If the dough is too sticky for you, don’t worry. Rolling it out on a floured surface will even it out. Delicious not just at Christmas time. The butter and lemon add that special something.
