Ingredients for 4 servings:
- 400 g wheat flour, preferably type 1050
- 100 g corn flour
- 1 packet of dry yeast
- 10 g salt, or as needed
- 20 g pine nuts or almonds, chopped, approx. 2 tbsp
- 4 g coriander seeds, approx. 1 tsp
- 4 g fennel seeds, approx. 2 tsp
- 2 cardamom pods
- 4 g rosemary needles, dried, approx. 4 tsp
- 100 ml olive oil
- 250 ml water, a little more or less
- n. B. Cinnamon stick(s), ground, optional
Instructions

Pre-toast the pine nuts or chopped almonds in a pan over low heat without fat or oil. Peel the cardamom pods. Once the almonds have taken on some color, add the fennel and coriander seeds and cardamom and roast until they begin to smell. Finely crush/grind everything together with the rosemary needles (e.g., in a mortar and pestle). Sift both flours into a bowl or onto a work surface, mix with the yeast, salt, and the spice mix. Make a well in the center, add water first, then the oil, and knead into an elastic dough (approx. 10 minutes). Form the dough into a ball and let it rise in a bowl in a warm place for approx. 1.5 – 2 hours (or longer!), covered (with a tea towel!). Divide the dough into 8 portions (approx. 100 g each). Form each portion into a ball again, then flatten it by hand into a flatbread (approx. 8-10 mm thick). To prevent sticking, dust each one with flour. Prick the flatbreads several times with a fork and cook on the grill (depending on the heat, twice on each side for 4-5 minutes) or in a pan (a grill pan creates a beautiful pattern!) without fat or oil.
