Sweet rice casserole

Ingredients for 2 servings:

  • 1 liter of milk
  • 200 g rice pudding
  • 100 g sugar
  • 3 eggs

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Bring the milk, sugar, and rice pudding to a boil. Cook the rice pudding for about 30 minutes (it will be a fairly thick mixture). Then let it cool. Once cooled, separate the eggs. Stir the egg yolks into the rice pudding and beat the egg whites until stiff peaks form. Fold the egg whites into the rice pudding and then pour the mixture into a baking dish. Bake the rice pudding in the oven at 180°C for about 45 minutes. Serve with vanilla sauce, cherries, etc. If desired, you can also add raisins or nuts.
