Raspberry – herb – vinegar

Ingredients for 1 servings:

  • 500 g raspberries, ripe
  • 1 handful of mixed herbs such as sage, mint and peppermint
  • ½ liter vinegar (wine vinegar)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Excellent for fine salads and sauces and for game dishes

Carefully select the raspberries, ensuring they are in perfect condition and unsprayed (from your own garden). Do not wash them. Place the berries in a bulbous container or bottle, add the white wine and herbs. Seal and place on a windowsill in the sun. Shake once a day. Let it steep for about 3 weeks, until the fruit has lost its color. Then filter and transfer to a dark bottle and store in a cool place.
