Ingredients for 1 servings:

  • 250 g spelt flour type 1050
  • 250 g wholemeal spelt flour
  • 1 packet of dry yeast
  • 450 ml water
  • 70 g sunflower seeds
  • 50 g flaxseed
  • 50 g sesame seeds
  • 1 tsp, heaped salt
  • 1 pinch(s) of sugar
  • 1 shot of fruit vinegar
  • n. B. Caraway, crushed

Instructions

Working time approx. 10 minutes; Rest time approx. 2 days 12 hours; Cooking/baking time approx. 1 hour; Total time approx. 2 days 13 hours 10 minutes

Combine all dry ingredients, except for 20g of the sunflower seeds, in a bowl. Mix with the splash of fruit vinegar and water until a soft, smooth dough forms. Let the dough rise for about 1 hour. Preheat the oven to 200°C (top and bottom heat) or 170°C (fan oven). Pour the dough into a greased or parchment-lined loaf pan, sprinkle with the remaining sunflower seeds, and bake for about 60 minutes, or 5 minutes less if using fan oven. Let the bread cool slightly before slicing.
