Ingredients for 1 servings:

  • 1 kg turkey breast, cut into thin strips
  • 300 ml soy sauce
  • 200 ml chili sauce, sweet and spicy, Thai style
  • 200 ml curry sauce (Thai curry sauce) for spring rolls
  • 250 ml teriyaki sauce
  • 100 ml honey
  • Liquid smoke
  • Tabasco, green
  • pepper
  • Garlic granules
  • Onion granules
  • smoked salt
  • 5 g baking soda

Instructions

Working time approx. 30 minutes; Rest period approx. 2 days; Cooking/baking time approx. 5 hours; Total time approx. 2 days 5 hours 30 minutes

Turkey breast jerked meat or dried meat, sweet and spicy

Combine the marinade ingredients and then refrigerate with the meat in a freezer bag for 48 hours, keeping as airtight as possible. Alternatively, it’s a good idea to fold the marinade in beforehand, especially with thicker marinades. Knead the marinade thoroughly every now and then during the marinating time. Then dry the meat on a paper towel or kitchen towel. Spread it out on a dehydrator or baking rack (do not overlap) and dehydrate for 4-5 hours at approximately 60°C.
