Ingredients for 1 servings:

  • 1 duck breast
  • Sea salt, coarse
  • Rosemary, dried and chopped

Instructions

Working time approx. 10 minutes; Rest period approx. 14 days; Total time approx. 14 days 10 minutes

Wash the duck breast and trim any excess fat. Place the duck breast in a lidded container and sprinkle generously with sea salt to completely cover. Close the lid. Let it marinate in the refrigerator for 12-18 hours. Remove from the container and rinse off the salt. Dry with kitchen paper. Then place the duck breast on a cotton cloth and sprinkle with rosemary. Wrap the cotton cloth around the duck breast and let it dry in the bottom compartment of the refrigerator for about 2 weeks. Tip: You can also replace the rosemary with thyme, Herbes de Provence, or other dried herbs, as desired.
