Ingredients for 4 servings:
- 800 g minced poultry
- 3 cloves garlic, or more
- 3 tbsp tomato paste, for binding
- 1 m.-sized onion(s)
- 1 tbsp pine nuts, crushed
- n. B. Salt and pepper, from the mill
- 2 tbsp spelt flour
- 3 tbsp extra virgin olive oil
- 1 cup of tomatoes, tomato frito or pureed tomatoes
- 1 handful of herbs, such as tomillo – thyme + oregano

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Spanish chicken meatballs
Peel and finely chop the onion and garlic cloves. Crush the pine nuts. Knead the ground meat with the egg, tomato paste, diced onion and garlic, and crushed pine nuts until well combined. Season with salt and pepper to taste, form into small balls, and coat in spelt flour. Heat the oil in a pan and fry the meatballs evenly. Serve the meatballs with a tomato frito sauce. You can also season them with fresh herbs.
