Ingredients for 2 servings:

  • 1 zucchini
  • 1 bell pepper(s)
  • 1 kohlrabi
  • ¼ head of broccoli
  • ¼ head of cauliflower
  • 2 eggs
  • 75 g mozzarella, grated
  • 1 tbsp herbs de Provence
  • 1 tsp, heaped parsley
  • 1 tsp, heaped basil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

FRED suitable

Wash and chop the cauliflower and broccoli. Boil the cauliflower in salted water for 10 minutes. After 5 minutes, add the broccoli. Finely chop the zucchini, bell pepper, and kohlrabi. Place these ingredients in a casserole dish. Mix the eggs with the spices and herbs and pour over the vegetables. Sprinkle the mozzarella over the vegetables and bake in a preheated oven at 160°C (320°F) for 20 minutes.
