Baked cheese and spinach fritters

Ingredients for 4 servings:

  • 4 eggs
  • 4 tbsp flour
  • 2 tbsp cheese, grated
  • Salt and some milk
  • 1 pack of creamed spinach, frozen
  • ¼ liter of milk
  • 3 eggs
  • Salt Parsley
  • 2 tbsp cheese, grated
  • 1 tbsp breadcrumbs
  • 2 tbsp parsley, chopped
  • nutmeg
  • Butter in flakes
  • some béchamel sauce if needed to thicken the spinach

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Make a thin batter from four eggs, flour, cheese, salt, and a little milk, then let it rest for a while. Meanwhile, warm the spinach; it should be quite thick (add béchamel sauce if necessary), then stir in an egg. Use the batter to make thin omelets, which are then spread with spinach, rolled up, and cut into pieces about 4-5 cm wide. Place these pieces upright in a greased baking dish. Whisk together the milk, two eggs, salt, nutmeg, parsley, and 1 tablespoon of grated cheese, and pour over the spinach fritters. Sprinkle with 1 tablespoon of cheese mixed with breadcrumbs and place knobs of butter on top. Bake at 180°C for about 25 minutes.
