Ingredients for 4 servings:
- 2 rolls, from the day before
- 1 onion(s)
- 2 tbsp butter
- 500 g peas, freshly cooked
- 2 eggs
- 1 tbsp mustard, medium hot
- Sea salt
- Pepper, black from the mill
- 1 pinch of nutmeg
- 5 drops soy sauce
- 1 tsp pepper, green, whole
- 3 tbsp parsley, finely chopped
- Oat flakes, for binding
- 150 g flour (wholemeal flour)
- 2 eggs
- 150 g breadcrumbs
- Oil, for frying
Instructions

Soak the rolls in water. Finely chop the onion and sauté in butter until translucent. Puree the peas and mix in a bowl with the onion, eggs, and mustard. Squeeze out the excess water from the rolls and add them along with the spices and parsley. Thicken the mixture with oatmeal and form meatballs with wet hands. Coat the meatballs first in whole-wheat flour, then in the beaten eggs, and finally in breadcrumbs. Heat plenty of oil in a pan and fry the meatballs until golden brown. Drain on kitchen paper and serve immediately. Serve with tomato salad.
