Broccoli – Carrot – Cakes

Ingredients for 4 servings:

  • 300 g broccoli
  • 200 g carrot(s)
  • 100 g low-fat curd cheese
  • 1 egg(s)
  • 6 tbsp oat flakes
  • 40 g flour
  • breadcrumbs
  • salt and pepper
  • Garlic granules
  • marjoram
  • nutmeg
  • olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely dice the broccoli and carrots and cook quickly; they should still be firm to the bite. Mix the low-fat quark and egg. Add the oats, flour, and vegetables and knead everything into a dough. Season generously with salt, pepper, marjoram, garlic, and nutmeg; the breadcrumbs will absorb some of the flavor. With wet hands, form small cakes and roll them in breadcrumbs. Heat the olive oil and fry the cakes on both sides until crispy brown.
