Spaghetti with tomatoes and zucchini

Ingredients for 4 servings:

  • 400g spaghetti
  • 3 garlic cloves
  • 1 bunch of parsley
  • 200 g zucchini
  • 200 g cocktail tomatoes
  • 5 tbsp olive oil
  • Parmesan
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Prepare the spaghetti in salted water as usual. Finely chop the garlic and parsley, quarter the tomatoes, and finely grate the zucchini using a vegetable grater. Heat the oil and sauté the garlic and parsley. Add the zucchini and tomatoes and heat briefly. Drain the spaghetti in a colander, reserving 125 ml of the cooking water and adding it to the vegetables. Season with salt and pepper. Mix the spaghetti and vegetables. Serve with Parmesan cheese.
