Ingredients for 4 servings:
- 500g spaghetti
- 4 tomatoes, diced
- 2 red bell peppers, diced
- 2 onions, finely diced
- 1 pack of pine nuts
- Parsley, fresh, chopped
- Thyme
- salt and pepper
- oregano
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
perfect for hot summer days, light and delicious
Cook spaghetti as usual. In the meantime, wash all the vegetables and parsley and chop them into small cubes. Place everything in a bowl and season. Toast the pine nuts in a pan without oil until lightly golden. Serve the spaghetti with about 3 tablespoons of the tomato and pepper mix and sprinkle with pine nuts.
