Bruschetta with radicchio

Ingredients for 5 servings:

  • 200 g radicchio
  • 1 m.-sized onion(s)
  • 3 tbsp olive oil
  • 50 ml red wine
  • 1 lemon(s), untreated, zest
  • salt and pepper
  • Parsley
  • Parmesan for sprinkling
  • 20 slices of baguette
  • Cream cheese for garnishing

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 28 minutes

Cut the radicchio leaves into thin strips, then finely chop the onions and parsley, then grate the Parmesan cheese. Add the oil to a pan and sauté the onions with the radicchio, then deglaze with red wine. Season with salt, pepper, and lemon zest, but do not let the liquid completely evaporate. Finally, add the parsley and spread it on the bread slices. Place the baguette slices in the oven preheated to 220°C (top/bottom heat) and bake for about 8 minutes. Sprinkle with the Parmesan cheese, top with the cream cheese dumplings, and serve.
