Elva's bruschetta variation

Ingredients for 3 servings:

  • 5 cocktail tomatoes
  • ½ bell pepper(s)
  • 1 shallot(s)
  • 1 spring onion(s)
  • 1 clove(s) garlic
  • 1 ball of buffalo mozzarella
  • 1 tsp olive oil
  • 3 slice(s) of bread(s) (farmer’s bread)
  • e.g. cream cheese or butter
  • basil
  • salt and pepper
  • Pizza seasoning

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Hollow out the cherry tomatoes, chop only the firm parts, and place them in a bowl. Finely chop the bell pepper and leek, and chop the shallot and garlic. Dice the mozzarella. Mix everything together in a bowl with 1 teaspoon of olive oil, season with basil, salt, pizza seasoning, and pepper. Spread the bread slices with cream cheese or butter, cut in half, and top with the mixture. Bake in a preheated oven at 150°C (fan oven) for 10 minutes.
