Herring bites in cheese and egg cream

Ingredients for 4 servings:

  • 250 g salted herring(s) (fillets)
  • 200 g processed cheese
  • 1 small onion(s) (optional)
  • 1 egg yolk
  • 1 pinch(s) nutmeg, or grated mace
  • 1 pinch(s) lemon zest, grated
  • pepper
  • Salt (optional)
  • Cream (optional)

Working time approx. 25 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 25 minutes

sounds crazy, but tastes very good

Soak the salted herring fillets for 1-2 days (change the water frequently) and then cut into bite-sized pieces. Dice the onion into fairly large cubes. For the cheese and egg mixture, combine the processed cheese, egg yolk, and spices in a bowl and mix well. If the processed cheese is a bit too thick, thin it with a little cream (or coffee cream). Taste the mixture again and stir in the herring pieces and onion. Let it sit in the refrigerator for about 6 hours.
