Ingredients for 4 servings:
- 250 g salted herring(s) (fillets)
- 200 g processed cheese
- 1 small onion(s) (optional)
- 1 egg yolk
- 1 pinch(s) nutmeg, or grated mace
- 1 pinch(s) lemon zest, grated
- pepper
- Salt (optional)
- Cream (optional)

Soak the salted herring fillets for 1-2 days (change the water frequently) and then cut into bite-sized pieces. Dice the onion into fairly large cubes. For the cheese and egg mixture, combine the processed cheese, egg yolk, and spices in a bowl and mix well. If the processed cheese is a bit too thick, thin it with a little cream (or coffee cream). Taste the mixture again and stir in the herring pieces and onion. Let it sit in the refrigerator for about 6 hours.
