Ingredients for 1 servings:
- 375 g potatoes
- 375 g apples
- 500 ml apple juice
- 2 lemons
- 20 ml rum
- 1 bag of vanilla sugar
- 500 g gelling sugar, 2:1
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes

Squeeze the lemons. Peel the apples, core them, and grate them. Peel the potatoes and grate them. Mix with the lemon juice, then bring to a boil with the preserving sugar in a large saucepan, stirring continuously, and simmer for 4-5 minutes. Test for set and pour into clean twist-off jars. Seal immediately and let cool upside down for about 10 minutes.
