Ingredients for 1 servings:

  • 500 g butternut squash(s), cleaned and weighed
  • 500 g banana(s), peeled and weighed
  • 500 g gelling sugar 2:1
  • 1 pinch of nutmeg
  • ¼ tsp ginger

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Cook the chopped pumpkin in a large pot with a little water until soft (I usually start with 100 ml and add more as needed to prevent burning; depending on the size of the pieces, this can take 10 to 20 minutes, stirring frequently). Add the sliced ​​bananas and let them cook until soft, then puree. Add the spices (a little more if you prefer a stronger flavor) and preserving sugar, bring to a boil while stirring. Once boiling, continue to boil vigorously for another 4 minutes. Be careful, it will splash. Then fill clean jars to the brim and seal tightly.
