with cheese and vegetables

Clean, peel, rinse, and thinly slice the carrots. Dice the cooked ham slices. Place the noodles, carrots, peas, milk, vegetable stock, and cream cheese in a large, wide pot, such as a wok, and bring to a boil, stirring occasionally. Season the dish with a little salt, a few turns of freshly ground pepper, and a little freshly grated nutmeg, if desired. Cover the noodles and cook for about 8 to 10 minutes, stirring occasionally. Rinse the chives, shake dry, and finely chop them. Mix the cooked ham cubes into the noodles. Sprinkle the chives over the dish and serve. Instead of carrots and peas, you can use diced zucchini, broccoli florets, corn, or spinach.
