Summery watermelon and cucumber salad

Ingredients for 4 servings:

  • 1 cucumber(s)
  • ¼ melon(s) , (watermelon)
  • 1 tbsp rapeseed oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • salt and pepper
  • Cayenne pepper
  • some dill, freshly chopped

Instructions

Fruity, fresh, and delicious. Suitable for cold weather

Wash and peel the cucumber, then quarter it lengthwise, remove the seeds, and cut the cucumber into approximately 1 cm wide pieces. Peel the melon and remove any larger seeds. Dice the flesh. In a salad bowl, combine the oil, lemon juice, and honey. Season with salt, pepper, and cayenne pepper. Stir the dill into the salad dressing. Add the melon and cucumber pieces to the dressing and mix well. Let it marinate briefly and season again to taste. This salad tastes best when well chilled! 1 serving (rounded up)
