Dad's hearty-sweet fried potatoes with honey and bacon

Ingredients for 2 servings:

  • 5 m.-large potatoes, waxy
  • 4 slices of bacon
  • 1 tbsp honey
  • Margarine (baking margarine)
  • curry powder
  • Paprika powder, sweet
  • Salt
  • onion salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Boil the potatoes in salted water for 20 minutes or use leftovers from your last potato dish. Halve the potatoes and cut into slices (about 5 mm thick). Cut the bacon slices into small strips. Add a generous amount of baking margarine to the pan and heat. The melted margarine should float to the bottom of the pan to a depth of about 1-2 mm. Now add the bacon strips to the pan and spread them evenly, so that each bacon strip touches the bottom of the pan. Once the bacon has shrunk slightly (this will take about 2-3 minutes), turn the strips over as best you can using a fork and spatula. The margarine will absorb the flavor of the bacon. Now add the sliced ​​potatoes, spread them evenly, and turn them over after about 4-5 minutes. Sizzle everything for another 3-4 minutes, then season the potatoes with salt, curry powder, paprika, and onion salt, if desired. Spread the honey evenly over the potatoes and immediately mix with a spatula until the spice and honey mixture turns the potatoes bright orange and shiny. Sizzle the potatoes, turning them regularly, until they are crispy and golden brown. A fried egg is a great side dish.
