Noodles in cucumber-dill-cheese sauce with garlic

Ingredients for 2 servings:

  • 150 g spaghetti
  • 175 g cucumber(s)
  • 1 corner(s) of processed cheese
  • 1 tbsp dill
  • 1 tsp sea salt
  • ½ tsp pepper
  • 1 tsp soy sauce
  • 2 garlic cloves
  • 300 ml vegetable stock

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the noodles in salted water according to the package instructions and drain. Roughly dice the cucumber and place it in a blender with all the ingredients except the dill and garlic. Blend on high for one minute. Empty the contents into a saucepan and bring to a boil. Then cook over medium heat for another five minutes, stirring frequently. Two minutes before the end of cooking, add the crushed garlic and chopped dill. Season to taste, toss with the noodles, and serve.
