Ingredients for 2 servings:
- 1 clove(s) garlic, chopped
- some oil (e.g. coconut oil) for frying
- 3 avocados, ripe
- 1 lime(s), the squeezed juice
- 100 g goat cheese, creamy
- some basil, chopped
- 1 chili pepper(s), dried, chopped
- 1 shot of milk
- some salt and pepper
- 250 g pasta (e.g. macaroni)
- 2 large tomatoes, chopped
- some light mozzarella, grated
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 37 minutes
Finely chop the garlic and fry briefly in a pan with coconut oil, for example. Then add the garlic and the other 7 ingredients to a food processor or blender and puree until smooth. Cook the pasta according to the package instructions. Drain well. Mix the sauce with the pasta in a bowl and fold in the chopped tomatoes. Transfer everything to a baking dish and sprinkle with some mozzarella cheese. Finally, place everything in a preheated oven at 180°C for approx. 10-12 minutes.
